Pastel de AtĂșn, or Tuna Cake

Ingredients:
  • 1 garlic clove, diced
  • 1 medium onion, finely diced
  • 3 tablespoons vegetable oil
  • 1 1/2 cups of bread previously soaked in water and squeezed
  • 2 cans tuna
  • 1/4 cup milk
  • 4 tablespoons shredded Parmesan cheese
  • 6 eggs
  • 1 teaspoon mustard
  • Salt and pepper to taste
Preparation:
Fry onion and garlic in hot oil. Add bread and cook for several minutes, mixing thoroughly. Add shredded tuna, milk, shredded cheese and eggs, slightly beaten. Season with mustard, salt and pepper. Grease a rectangular 12x8 inch mold and pour in the mix. Place in oven to bake at 350 degrees for 30 minutes. Serves 6 to 8.
